We are currently recruiting for a Full-Time experienced Chef de Partie to join our Clubhouse kitchen team here at Kilkea Castle

Job Title: Chef de Partie

Reporting to: Executive Head Chef

Job Description: The successful candidate will be responsible for production of food items, be familiar with the menu, providing guests with a memorable meal at the fine dining 1180 restaurant and ensuring all dishes are prepared in a timely fashion while ensuring HACCP compliance within the kitchen.

Key Responsibilities

1. Contribute to the production of food items in accordance with instructions from the Sous Chef and/or the Head Chef
2. Be knowledgeable of the day’s business
3. Be familiar with the menu
4. Ensure all dishes are prepared in a timely fashion while ensuring dishes leaving the kitchen are prepared to the approved standard for presentation
5. Avoid unnecessary wastage, observe proper portion planning and control and to act in a cost effective, responsible manner
6. Ensure excellent food hygiene practice is observed in the entire food chain from storage through to preparation and service
7. Ensure HACCP compliance within the kitchen
8. Ensure kitchen equipment is in working order and report any maintenance issue to your supervisor

Skills/Requirements

1. Previous experience in a similar role in a 4 star hotel preferred
2. Valid work permit for a minimum of 12 months is required
3. Be talented, creative and have a genuine passion for food
4. Friendly, dedicated individual, with attention to detail
5. Team player who works and communicates well with others
6. Excellent time management and problem solving skills as well as ability to work well under pressure
