Overview

The Award Winning Ballygarry Estate Hotel & Spa, in the vibrant town of Tralee, currently has an exciting opportunity for a Breakfast Chef to join our outstanding kitchen team

Responsibilities
  • Scope of Role: The breakfast chef is responsible for preparing and cooking breakfast meals for hotel guests.
  • This includes creating a menu, planning and organizing the production of breakfast dishes, and managing a team of kitchen staff to ensure efficient and high-quality service.
  • To ensure 4* standards of service are achieved at all times.
  • To perform in a professional and courteous manner with all customers (internal & external).
  • To offer an in-depth knowledge of products and hotel services in general.
  • To ensure all hygiene regulations and HACCP are adhered to at all times.
  • To comply with statutory and legal requirements for Health & Safety, Fire, Hygiene and Employment.
  • To set up assigned work station.
  • To ensure a high standard of personal hygiene and grooming.
  • To prepare, cook and serve Breakfast/Lunch according to recipes and as directed.
  • To report all maintenance problems to the manager on duty.
  • To attend and participate in hotel meetings and training.
  • To ensure that the fridges are cleaned daily to the standards required and that the food required for your section is properly stored to the required standards.
  • To make sure that all personnel abide by HACCP and the SOP's.
  • Creating a breakfast menu that caters to the preferences and dietary restrictions of hotel guests.
  • Planning and organizing the production of breakfast dishes, including prepping ingredients, cooking, and plating.
  • Managing inventory and ordering supplies to maintain adequate stock levels. Ensuring that all food products are fresh, of high quality, and comply with hotel standards.
  • Help in the preparation of sauces etc. for lunch service.
  • Set up of Banbury for lunch service.
  • Supervising and training kitchen staff, assigning tasks, and ensuring effective teamwork.
  • Adhering to food safety and sanitation regulations, including proper storage, handling, and cooking techniques.
  • Collaborating with other departments, such as front desk and dining room staff, to ensure a seamless breakfast service for guests.
  • Developing and maintaining positive relationships with suppliers to ensure timely delivery of fresh and high-quality ingredients.
  • Maintaining a clean and organized kitchen environment, including proper storage and maintenance of kitchen equipment.
  • Monitoring food costs and implementing cost-saving strategies without compromising on quality.
  • Staying updated with industry trends and innovations in breakfast cuisine to continuously improve menu offerings and guest satisfaction.
  • To attend and participate in hotel meetings when required & to attend training.
  • Overall, the Breakfast Chef plays a crucial role in ensuring guests have an excellent dining experience by maintaining cleanliness and hygiene throughout the kitchen, preparing & cooking high quality breakfast options and supporting the Chefs de Partie in preparation for lunch service.
  • You must remain totally flexible in your position and may be required to carry out other tasks as directed by management.
