Responsibilities:
  • Requisitioning of foodstuffs and materials.
  • Preparation of both raw and cooked food.
  • Cooking food to required standards.
  • Portioning and packing of both raw and cooked food.
  • Rotation and allocation of foodstuffs.
  • Labelling, chilling, and storage of food.
  • Regeneration and service of food.
  • Maintaining the cleanliness and good order of the assigned area and related areas in line with Mercy University Hospital and HSE policies.
  • Efficient and economical use of materials and equipment.
  • Adhering to specifications, standards, and procedures during work.
  • Practicing all hygiene, cook-chill, and health and safety procedures, including HACCP.
  • Reporting mechanical defects and repair needs.
  • Ensuring maximum security of your area and equipment.
  • Reporting accidents, fires, stock loss, damage, or unfit food to management promptly.
  • Assisting with special functions as required.
  • Providing guidance to staff on portion sizes in packing and plating areas.
  • Checking the quality, quantity, and presentation of meals at all service points.
  • Supervising kitchen staff to ensure compliance with standards and safety regulations, and reporting deviations to management.
Eligibility Criteria

Applicants must, by the application deadline:

  • Hold a Professional Cookery award at minimum Level 6 on the NFQ or equivalent, or an equivalent qualification from another jurisdiction, or be currently employed as a Chef in the Irish Health Service.
  • Possess the necessary knowledge, skills, and professionalism to perform the role effectively.
