Dromoland Castle, one of Ireland's most prestigious destinations, is currently recruiting for a Chef Apprentice. This is a unique opportunity to become part of an award-winning culinary team and gain exceptional training through a structured apprenticeship programme. What You'll Be Doing:

• Understand the day's business, service needs, and menu offerings
• Prepare dishes in a timely and consistent manner, ensuring top presentation standards
• Minimise waste and support cost-effective kitchen practices through portion control
• Uphold the highest standards of food hygiene and HACCP compliance
• Participate in a collaborative, professional kitchen environment
• Learn, practice, and refine advanced culinary techniques
• Supervise a specific section in the kitchen and assist in training Commis Chefs

About the Apprenticeship Programme:

This Chef Apprenticeship is an ''earn and learn" degree pathway, combining hands-on professional experience with academic study through a Technological University Culinary Arts Chef De Partie Apprenticeship - TUS.

Through this programme, you will:

• Gain advanced culinary skills
• Develop supervisory and leadership capabilities
• Learn the 'why' behind culinary methods
• Follow a structured curriculum blending classroom theory and real-world practice
• Be mentored by senior chefs at one of Ireland's most historic luxury hotels

The Ideal Candidate:

• Interested in or recently completed a 3rd-level qualification in Culinary Arts
• Previous kitchen experience (hotel or fine dining preferred)
• Passionate, creative, and eager to develop in a fast-paced kitchen
• Detail-oriented and organized, with excellent time management skills
• A strong team player with great communication and problem-solving skills
