The ideal candidate will be a highly skilled and ambitious culinary professional with a passion for delivering exceptional food quality and presentation. They will have experience in leading kitchen teams and managing daily operations to meet the highest standards of service excellence.

Key Responsibilities:
  1. Assist the Head Chef and Sous Chef in overseeing the smooth operation of the kitchen, ensuring that all dishes are prepared to the highest standards.
  2. Manage a specific section of the kitchen, such as sauces, fish, or pastry, and lead a team of junior staff to achieve outstanding results.
  3. Contribute to menu planning and development, incorporating seasonal and local ingredients to create innovative and delicious dishes.
  4. Train and mentor junior kitchen staff, promoting a culture of collaboration and innovation within the team.
  5. Maintain strict adherence to food safety and hygiene standards, ensuring that the kitchen operates at the highest level of cleanliness and efficiency.
  6. Collaborate with front-of-house staff to ensure seamless service and guest satisfaction, maintaining a strong focus on customer care.
Requirements:
  • A degree in Culinary Arts or equivalent qualification from a reputable institution.
  • A minimum of 3-5 years of experience in fine dining or Michelin-starred restaurants, with a proven track record of success in leadership roles.
  • Advanced knowledge of culinary techniques and current gastronomic trends, with expertise in various kitchen stations including sauces, pastry, fish, and meat.
  • Strong understanding of Irish cuisine and international culinary practices, with a passion for using seasonal ingredients and local produce.
  • Proficiency in menu planning and development, with excellent knowledge of food safety and hygiene standards, and relevant certification.
  • Demonstrated leadership skills and ability to work effectively in a team, with strong time management and organisational skills.
