Culinary Explorer in the Amazon Rainforest

This is an opportunity to immerse yourself in the rich cultural heritage of the Amazon region, exploring the intersection of ancestral farming and cooking practices with modern cuisine. You will learn about the diverse array of edible plants, fruits, herbs, and spices that exist in the Amazon, and how these products can support local economies in a sustainable way.
The internship begins with an orientation in the city of Tena, after which you will spend time getting to know your host family and internship placement. Depending on the needs of the placement, activities may include learning from local farmers and cooks, identifying edible and medicinal plants, preparing traditional dishes, contributing to work in the chakra (traditional agroforestry farm), creating trails in medicinal plant gardens, supporting eco-tourism projects, and researching local Amazonian products and national/international markets where they can be sold.
As a participant in this program, you will live with a host family in a rural community close to the forest, allowing you to forge meaningful connections with locals during your time in the Amazon. Many host families have their own agroforestry farms and invite interns to join them when they plant, weed, and harvest. Some of the amazing products you will get to learn about and experiment with include ishpingo (Amazonian cinnamon), ajo de monte (wild garlic), sacha inchik (Amazonian wild peanut), chontacuro (grub), chonta (a palm fruit), and locally-grown turmeric and ginger.
The goal of this internship is to give you the contacts and experience to further your career in a field related to culinary arts, sustainable agriculture, and environmental conservation. This is not a replacement position, but rather an opportunity for you to learn new skills and gain hands-on experience while making a positive impact on the local community.
