  • Job Responsibilities:
  • To establish and implement high standards of performance within the food production areas, ensuring services offered meet the highest 4-star quality.
  • With your team, prepare, cook and present food to consistently high standards for all food service areas.
  • Manage catering budgets effectively, controlling costs and labour expenditure.
  • Carry out effective recruitment, hiring the right people with the necessary skills, in the right place at the right time, controlling labour costs.
  • Attend Hotel & Department Meetings as required, ensuring effective communication at all levels.
  • Build an environment that promotes employee morale and encourages team pride and commitment, always promoting a Culture of Respect and Core Values of Fun, Passion, Excellence, Honesty & Flexibility.
  • Own and control departmental budgets and costs, working closely with the Financial Controller.
  • Appraise and assess employees within the Food Production areas on a regular basis.
  • Ensure adherence to all hygiene & HACCP regulations at all times.
  • Work with the HR department to develop and implement effective training plans for the Department.
  • Be a flexible and adaptable member of the Management team, working together with the General Manager to achieve business aims and profile.
  • Develop and contribute to the development of Training Manuals (SOP Manuals) for the Kitchen.
  • Maintain excellent customer care and professionalism at all times.
  • Requirements:
  • A minimum of 5 years experience at Senior Chef Level in a 4* Hotel.
  • Strong Leadership qualities.
  • Excellent communication, organisation & people management skills.
  • Ability to train new & existing staff.
  • Excellence knowledge of culinary development and a strong eye for detail.
  • Possess the ability to perform under pressure.
  • Fluent in spoken & written English.
  • Availability to work 5 over 7 days for both opening and closing shifts.
  • A strong level of HACCP.
  • Knowledge of Budgeting and Rostering.
