Select Recruitment is currently seeking a talented and experienced Chef de Cuisine to join our prestigious client, a Michelin-starred restaurant. The Chef de Cuisine will be responsible for overseeing all aspects of kitchen operations, including menu creation, food preparation, and ensuring the highest standards of taste, presentation, and quality. As the leader of the culinary team, you will have the opportunity to inspire and mentor a team of talented chefs, bringing out their full potential and creating a cohesive and successful kitchen environment.

Responsibilities
  • Lead the culinary team in creating and executing menus that reflect culinary identity and showcase the best of Irish and French-inspired cuisine.
  • Collaborate closely with Chef Patron to develop innovative dishes and culinary concepts that delight and inspire guests.
  • Maintain the highest standards of food quality, presentation, and flavor by overseeing all aspects of kitchen operations, including food preparation, cooking, and plating.
  • Foster a culture of creativity, excellence, and continuous improvement within the kitchen brigade, providing mentorship, training, and support to team members.
  • Ensure strict adherence to health, safety, and sanitation standards in compliance with regulatory requirements and company policies.
  • Manage inventory, food costing, and procurement processes to optimize resource utilization, minimize waste, and control food costs.
  • Work closely with front-of-house staff to coordinate service and ensure a seamless dining experience for guests.
  • Stay informed about culinary trends, market developments, and industry best practices, incorporating new techniques and ingredients into menu offerings as appropriate.

Requirements

  • Culinary degree or equivalent certification from a recognized culinary institute.
  • Proven experience as a Chef de Cuisine or Executive Chef in a high-volume, fine dining establishment.
  • Strong leadership skills with the ability to inspire and motivate a diverse team of culinary professionals.
  • Creativity, innovation, and a passion for culinary excellence, with a keen understanding of flavor profiles, cooking techniques, and food presentation.
  • Solid knowledge of food safety and sanitation standards, HACCP principles, and kitchen management best practices.
  • Excellent organizational, communication, and problem-solving abilities.
  • Flexibility to work evenings, weekends, and holidays as required.
