Job Description

Leadership

  • To lead your team by example and to display passion and optimism.

  • To conduct reviews and one to one meetings with team members within the appropriate timeframes.

  • To accurately complete probation reviews and one to one meeting forms and submit to HR.

  • Manpower planning for all F&B outlets in conjunction with colleagues.

  • Succession planning in tandem with the People & Culture function of the hotel.

  • To drive planning and development and industry trends for the food and beverage department.

  • To monitor and develop new revenue streams and regular health checks in relation to revenue & product viability towards the bottom line.

Teamwork

  • To develop a strong working relationship with all colleagues in your department and all other departments.

  • To ensure clear lines of communication between your department and related departments.

  • To balance team and individual responsibilities and to provide support as required to fellow colleagues.

Service Standards/Set-Up Procedures

·       To ensure the smooth running of the F&B department ensuring the highest levels of guest service and guest satisfaction.

·       To have a thorough knowledge and understanding of all standards and delivery of same within the F&B department. 

·       To ensure team briefings are conducted on commencement of each shift in preparation of service.  Ensure a detailed an full handover is communicated to you by the relevant outlet managers.  Ensure team members are aware of their responsibilities.

·       To communicate any relevant information to related departments. 

·       To ensure F&B department is presented in a clean manner.

·       To have a thorough knowledge and understanding of all the procedures of the F&B department.

·       To ensure an efficient service with minimum delay or wastage.

·       To ensure dishes leaving the kitchen are according to our standards of presentation.

·       Liaise with the Head Chef to ensure smooth service between the Kitchen and the F&B department.

·       Liaise with conference co-ordinator/tour leaders and conference organisers to ensure smooth handling of large groups and a high level of prompt courteous service.

·       To be aware and analyse all forthcoming business on a regular basis and be aware of all daily and future business requirements.

·       To develop and actively participate in all training and personnel exercises designed to improve standards and performance levels.
