Responsibilities- Fully responsible for overseeing all aspects of all departments with a particular focus on F&B related areas as priority at all times.
- Support and work with all Heads of Department in all aspects of running the hotel.
- Install and follow efficient and effective work methods and systems and identify and agree schedules which facilitate high levels of staff productivity.
- Review staff rotas, ensuring adequate cover in the most cost-effective manner.
- Ensure our kitchens and premises meet and exceed the standards of the EHO/HSA/WRC and other government bodies, together with internal auditors and customer expectations.
- Ensure the premises are in a presentable condition at all times.
- Conduct regular operations team meetings with all Heads of Department to discuss operational matters, sales targets, costings, guest feedback and staff feedback, and address any staff issues.
- Identify and implement SOPs in all departments and verify their application during routine checks and hands-on involvement.
- Monitor purchases and control purchase orders, communicating with the GM and Hotel Manager as needed.
- Ensure cash handling procedures within operations are robust and practical to reduce errors, shortages and the potential for theft.
- Compile weekly/monthly financial reports detailing revenue, covers and staff productivity in each department.
- Control stock of Food & Beverage, driving for results and high operational standards.
- Carry out random inspections of stores (F&B/Kitchen) to check stock on hand, quality, par levels and expiry with the F&B Manager and Chef.
- Engage with Suppliers / Vendors for quality products via the Purchase Manager.
- Inspect all departments with their Managers for cleanliness, ambience, service readiness, staff grooming and hospitality culture.
- Work with the Sales & Events Manager to prepare a sales plan for F&B and C&B outlets, with emphasis on the local market.
- Plan for future business and make sound decisions.
- Prioritize Health & Safety, mindful of floor conditions and spillages, training staff to prevent accidents and claims.
- Assess and review customer satisfaction and the service recovery process.
- Identify staff learning needs and support development.
- Provide timely and constructive feedback to direct reports.
- Monitor and control operating overhead costs to maximise revenue for the organisation.
- Any other duties as assigned.
- Demonstrated history of success in Food & Beverage Management.
- Excellent people skills; customer-focused; hands-on leadership; able to motivate the team to deliver excellent guest experiences.
- Flexible to work weekends; professional in appearance and presentation; proactive problem-solver.
- 3+ years of F&B Manager experience.
