About the Role:
The Noel Group is a leading recruitment agency operating nationwide across the hospitality sector. We are proud to partner with a prestigious client in the hospitality industry to search for a talented Sous Chef to join their team in Cork.
The purpose of your role will be to assist in overseeing the kitchen in the chef's absence, maintaining high standards of food hygiene and professionalism. Train the team in new cooking techniques. Contribute to employee management, health and safety, operations, menu formulation, and promotions to optimise profit and uphold company standards.

Key Responsibilities:
- Develop new menu options based on seasonal changes and customer demand.
- Assist with the preparation and planning of meal designs
- Assist the Head Chef in the day-to-day operation of the kitchen
- To assist in planning rotas on a weekly basis and to review on a daily basis with the Head Chef, rotas, holiday requirements and absenteeism
- To ensure that training for all kitchen staff, including apprentices is carried out as requested by the Head Chef and to coordinate together with the Head Chef, training sessions with Chef de Partie, Commi Chefs and Apprentices in the kitchen operation.
- Ensure high standards of food quality, presentation, and consistency
- Develop unique and cuisine-appropriate dishes to enhance the culinary experience.
- Collaborate with more senior chefs to set item prices, create cost proposals, and compile diversified menus
- Supervise and guide kitchen staff, actively participating in the execution of proper cooking techniques and presentation.
- Ensure all meals prepared, including those personally cooked, align with specified recipes and adhere to portion control guideline
- Maintain strict hygiene and food safety standards in compliance with HACCP
- Train, mentor, and support junior chefs and kitchen staff
- Ensure smooth service during busy periods, including banquets and events
- Monitor and control food costs and wastage
Key Requirements:
- At least 5 years Senior level supervision experience in a busy 4/5* hotel kitchen. Preferably as Junior Sous or Sous Chef.
- At least 8 years' experience in the kitchen
- Strong knowledge of culinary techniques, menu planning, and food safety regulations
- Great communication skills – ability to clearly communicate with suppliers, management and staff across a variety of nationalities and experience levels.
- Thorough Understanding of the importance of Customer Experience and uncompromising standards of excellence
- Excellent leadership and team management skills
- Passion for food and creativity in menu design
- Strong organisational and multitasking abilities
- Formal culinary training and relevant certifications (HACCP qualification preferred)
