Job Summary: The Old Quarter Group is looking for a Mixologist to work across all three of our venues: The Old Quarter Pub & Townhouse 3 Little Ellen Street, Limerick City, V94 H278 The Top House Pub & Kitchen Newtown, Annacotty, Limerick, V94 N66X Fordes Courtyard Little Ellen Street, Limerick City, V94 P620 The ideal candidate will have previous experience (Minimum Mixologist 2 years experience) in a similar fast paced position, develop new and exciting recipes by combining innovative ideas, traditional knowledge and seasonal ingredients and developing a cocktail menu that excites our customers. Great organisation, leadership & communication skills are key as well as great customer service. Key Responsibilities: Assist the bar team and provides scheduling of bar operations and preparations. Assist with acquisition of all bar goods and stock inventories, including alcohol, ingredients and equipment. Work closely with our farm manager in the planning of seasonal fruit, vegetables and herbs for use in the creation of innovative cocktails. Assist with communications and transactions with suppliers for timely deliveries. Plans and presents Cocktail menus, develops new drink recipes and plans for maintenance of classic, specialty and drink recipes. Prepares and mixes ingredients for alcohol cocktails, other alcohol drinks or non-alcohol beverages for bar guests. Participate in all relevant internal staff training. Maintains the cleanliness and sanitation protocols of the bar areas, and practices safety standards within the bar and operations of all equipment, tools, service ware and utensils in order to prevent injuries or unwanted incidents.
