Lead Culinary Operations

The successful candidate will oversee the delivery of exceptional catering services, ensuring high standards in food safety, hygiene, quality, and presentation.

  1. Ensure daily catering operations meet strict criteria, maintaining a safe, nutritious, and well-presented meal experience for residents, staff, and visitors.
  2. Maintain full compliance with food safety legislation, adhering to HACCP guidelines and best practices for allergen management and food handling procedures.

Responsibilities also include managing on-site cafe operations, overseeing food storage, preparation, production, and distribution to ensure efficiency and safety.

Cafe Management and Development

The Lead Culinary Manager will lead, train, and supervise catering and cafe staff, ensuring ongoing development and performance standards are met.

  1. Organize efficient rotas and manage staffing needs effectively.
  2. Ensure all staff adhere to rigorous hygiene protocols and follow established food safety procedures.

In addition to these responsibilities, the candidate will be expected to maintain accurate records and documentation to support environmental health inspections and audit readiness.

Essential Qualifications and Experience
  • A degree in Culinary Arts or a related field is essential, with a management qualification preferred but not required.
  • At least three years of experience in a high-volume catering or cafe restaurant management role, with relevant supervisory responsibilities.
  • Certified HACCP Management training, such as QQI Level 6 Designing Food Safety Management Systems or equivalent, is a requirement.
  • Proficiency in Microsoft Office applications, including Outlook, Word, and Excel, is necessary.
