Job Description

We are seeking an experienced Chef de Partie to join our kitchen team at Talbot Hotel Stillorgan. The ideal candidate will have excellent interpersonal and organisational skills, be able to work variable shifts, and possess fluent English language skills.

The successful candidate will be responsible for delivering exceptional service within the Kitchen Department, maintaining high standards of cookery, and working supportively with the Head Chef and Sous Chef to create a positive working environment.

Main duties include:

  1. Preparation and presentation of all food for designated areas.
  2. Maintaining the high standards of cookery as laid down by the company.
  3. Working supportively with the Head Chef and Sous Chef to create a positive working environment within the kitchen that facilitates a great work-life balance for the kitchen team.
  4. Helping the Head Chef and Sous Chef with menu review and costing of the same.
  5. Ordering the hotel's food requirements in the absence of the Head Chef and Sous Chef or when directed.
  6. Demonstrating excellent personal hygiene.
  7. Assisting in achieving the best gross profit levels and controlling wastage.
  8. Ensuring cleanliness of the kitchen in all subordinate's work methods.
  9. Assisting and carrying out all HACCP controls as required under legislation.
  10. Ensuring all paperwork with regard to HACCP is completed.
  11. Assisting the Head Chef and Sous Chef in all training plans and records, upskilling and training the current kitchen team.
  12. Controlling storage of food and assisting in food stock control.
  13. Following rigidly all HR policies and procedures.
  14. Working supportively with the Head Chef and Sous Chef to ensure that the kitchen reaches its budgeted GP's.
  15. Controlling and monitoring all staff on duty in support of the Head Chef and Sous Chef ensuring all duties are being fully carried out in accordance with Company Procedures.
