Culinary Operations Manager

Overview:

A prominent hotel in Wexford seeks an accomplished and dynamic Culinary Operations Manager to lead its kitchen team. This role presents the opportunity to be part of launching a new bistro-style menu, while contributing to high standards of food service in a professional environment.

Key Responsibilities:
  1. Prepare, cook, and present high-quality dishes and sauces consistently.
  2. Operate effectively across various kitchen sections as required.
  3. Ensure all dishes are prepared and served promptly.
  4. Supervise junior kitchen staff when the Head Chef is unavailable.
  5. Collaborate with the Head Chef on menu review and costing.
  6. Manage food stock ordering when required or instructed.
  7. Maintain exceptional personal hygiene and food safety standards.
  8. Contribute to achieving gross profit targets and controlling kitchen wastage.
  9. Support training initiatives and performance reviews within the kitchen team.
  10. Comply fully with HACCP procedures and maintain accurate hygiene records.
  11. Effectively manage food storage and rotation for optimal stock control.
  12. Work collaboratively as part of the overall hotel team.
Candidate Profile:
  1. Have previous experience in a similar role, preferably within a 4-star hotel or high-volume kitchen.
  2. Be HACCP-certified with a strong focus on hygiene and safety protocols.
  3. Present a professional appearance and maintain a positive attitude.
  4. Demonstrate strong communication and leadership skills.
  5. Be flexible and available to work varying shifts, including weekends.
