Key Responsibilities:
  • Support the Head Chef in maintaining the smooth operation of the kitchen.
  • Maintain a positive working relationship between all kitchen staff and dining room staff.
  • In the absence of the Head Chef, assume responsibility for the overall kitchen operation.

Fundamental Job Requirements:
  • Prepare, provide, and present food according to prescribed standards through efficient resource utilization.
  • Participate in menu preparation and compilation for daily business and functions, contributing new ideas and suggestions.
  • Be familiar with upcoming hotel events and be prepared accordingly.
  • Have a thorough understanding of HACCP principles and implement them in the kitchen.
  • Ensure adherence to HACCP regulations among kitchen staff.

Additional Responsibilities:
  • Assist the Head Chef in managing food costs through strict purchasing control, portion control, and monitoring production and wastage.
  • Purchase food items via Procure Wizard as required.
  • Attend Head of Department meetings in the absence of the Head Chef.
  • Participate in stock takes when necessary.
  • Maintain familiarity with hotel policies and procedures regarding Health & Safety and Fire Regulations.
  • Supervise and train new staff members.
  • Contribute to the formulation of new menus.
  • Ensure accurate storage of deliveries upon arrival.
  • Cross-check deliveries with purchase orders and verify weights correctly.

Requirements:
  • A degree or diploma in culinary arts or a related field is preferred, though practical experience and on-the-job training may be considered.
  • Previous experience as a Chef de Partie or similar role is required to step into the role of a Sous Chef.
  • Strong work ethic with the ability to take initiative.
  • Strong cooking skills and knowledge of various cooking techniques.
  • Ability to handle multiple tasks efficiently and work in a fast-paced environment.
  • Excellent English communication skills, both written and verbal.
  • A personable demeanor and professional presentation.
  • Comprehensive knowledge of food safety and sanitation regulations to maintain a clean and safe kitchen environment.
  • Ability to adapt to new environments, prioritize tasks, and work efficiently under pressure.
  • Good time management skills to handle busy service periods and meet deadlines.
  • Willingness to work irregular hours, including evenings, weekends, and holidays, as required by the restaurant's operations.
  • Must have valid work permits to work in Ireland with no restrictions.
