Job Description: Wine Bar Team Leader


Scope of Position

The Wine Bar Team Leader takes ownership of daily Wine Bar operations, focusing on product offerings such as wine, cheese and charcuterie, along with team management. They are responsible for guiding individuals and leading the team to achieve objectives. The role requires maximising sales, managing stock levels, ensuring high standards of customer service and compliance with health and safety protocols and food safety systems.


Key Responsibilities

1) Customer Service

  • Lead by example to deliver exceptional standards of customer service.
  • Make educated wine variety recommendations to delight our guests.
  • Supervise wine service.
  • Achieve company's KPIs including sales and hours targets.
  • Address customer queries, complaints, returns, and special requests.


2) Operations

  • HACCP Compliance: Ensure established procedures for HACCP, cleaning routines, food safety, and workplace safety are followed. Keep all areas extremely clean and tidy. Update and maintain HACCP records, cleaning records, goods-in temperature control, and product batch sheets.
  • Inventory Management: Maintain appropriate stock levels, place orders, process deliveries, handle queries from Sales and Warehouse. Perform weekly and quarterly stock takes and fill out wastage and stock control sheets for Finance. Ensure correct storage of wine including open bottles.
  • Merchandising: Maintain agreed company standards and guidelines for product displays.
  • Roster Management: Create schedules according to agreed location hours targets. Monitor holiday/leave requests and ensure proper application of exception codes for payroll.
  • Promotions and Events: Organise, supervise and actively participate in promotions, wine tastings, public events and supplier visits.
  • Quality Control: Address quality issues, manage supplier feedback, and communicate with Sales and Warehouse regarding quality and food safety issues.
  • Communication: Monitor team communications and store email for product recall and withdrawal instructions. Respond to customer emails or phone calls.
  • Ad hoc Duties: Perform necessary tasks to fulfil the role and business needs effectively.


3) Management

  • Team Management: Direct the team, allocate tasks, manage breaks, and monitor work standards. Take ownership of day-to-day operations.
  • Team Building: Foster a positive work environment with outstanding teamwork, mutual respect and exceptional morale.
  • Collaboration: Work with the Area Manager and other Team Leaders on daily matters and strategic projects. Work with the Team Leader of the adjacent cheese shop as and when required and dictated by business needs. Work closely with our suppliers in order to maintain an up to date selection, ensuring the best possible offering.
  • Training and Development: Continuously train and develop team members using available training tools such as training planners and retail manuals. Participate in scheduled training sessions and conduct team meetings as necessary.
  • Recruitment: Conduct trials, interviews and on-boarding processes. Train new recruits and complete necessary checklists.
  • HR Activities: Conduct absence review meetings, probation and performance reviews, and complete records of conversation, return-to-work forms, and late forms.

Qualifications/Experience/Skills

  • At least 3 years' experience in a similar, supervisory role preferable
  • Genuine interest in and excellent knowledge of wine
  • Relevant experience in hospitality or a vineyard
  • Minimum 2 years' experience in a food and wine retail environment
  • HACCP and WSET trained
  • Certification as a sommelier or a degree in hospitality desirable
  • Excellent customer service and communication skills
  • Organised and calm under pressure
  • Available 5 over 7 days per week including late nights and weekends
