Fota Island Resort is a luxurious destination resort located on a picturesque island in Cork Harbour. Our mission is to provide an exceptional dining experience that showcases the best of Irish cuisine, using locally sourced ingredients and innovative techniques.

We are seeking a highly skilled and experienced Sous Chef to join our culinary team, reporting directly to our Head Chef. As a key member of the kitchen brigade, you will be responsible for assisting with day-to-day operations, planning and executing banquet and wedding functions, and developing menus that delight our guests.

Responsibilities:

  • Assist the Head Chef in managing kitchen operations, including menu planning, inventory management, and staff supervision.
  • Develop and implement new menu ideas, taking into account seasonal ingredients, dietary requirements, and guest preferences.
  • Collaborate with the events team to deliver exceptional banqueting and wedding experiences, ensuring every detail is meticulously planned and executed.
  • Maintain high standards of food quality, presentation, and hygiene, adhering to HACCP guidelines and regulatory requirements.

Skills and Qualifications:

  • Previous experience as a Sous Chef or equivalent role in a high-end restaurant or hotel.
  • Strong leadership skills, with the ability to motivate and inspire a team.
  • Excellent communication and interpersonal skills, with the ability to work effectively with colleagues across multiple departments.
  • HACCP knowledge and certification, with a strong understanding of food safety and hygiene protocols.
  • Basic computer skills and proficiency in Microsoft Office applications.
  • Fluency in English, with excellent written and verbal communication skills.
