Job Description

We are seeking an experienced and innovative Sushi Sous Chef who can work closely with the Head Chef to maintain quality and drive efficiency in the kitchen. This role requires extensive knowledge of sushi preparation, including fish cutting, rice preparation and ingredient handling, as well as strong management and teaching skills.

The successful candidate will be responsible for ensuring correct prep levels to ensure freshness and control wastage, as well as monitoring deliveries and stock, conducting daily due diligence, and checking cleaning rotas are completed. They will also be expected to train and mentor kitchen staff to maintain consistency and excellence, assist in scheduling, staffing, and performance management of kitchen personnel, and support the Head Chef and Senior Sous Chef in maintaining a positive work environment.

This is a fast-paced and dynamic role that requires excellent leadership abilities, strong communication and interpersonal skills, and the ability to thrive in a high-pressure environment. The ideal candidate will have previous experience as a Sushi Sous Chef, a deep understanding of sushi techniques, and a passion for innovation and excellence.

Required Skills and Qualifications
