There has never been a more exciting time to join the team, and we are now recruiting for a Chef de Partie in our fine dining restaurant The Oak Room (1* Michelin).

The Oak Room is our signature restaurant, open solely for dinner service. This beautifully oak-paneled room caters for up to 55 guests, with an adjoining private dining facility for a further 16 guests. Our menu concept is simple yet exquisite — a choice of two tasting menus, offering contemporary Irish cuisine paired with beverages prepared by a team of talented food & beverage professionals.

Our Culinary Team in the Oak Room is headed by Chef Mike Tweedie — a distinguished professional with an incredible background.

As a Chef de Partie at Adare Manor, your responsibilities will include:

  • Organizing the section regarding mise-en-place, production, and service.
  • Delegating tasks to Demi Chefs and Commis Chefs, and ensuring they are carried out correctly.
  • Preparing daily wine, dry store, food requisitions, and kitchen transfers for approval by the Executive Chef / Sous Chef to maintain high stock rotation.
  • Maintaining good colleague relations and motivating team members.
  • Providing one-to-one training and ensuring understanding.
  • Checking daily food preparation for portion size, quantity, and quality as per the recipe index.
  • Completing daily checklists for mise-en-place and food storage.

To apply for this role, you must have previous experience in a similar fine dining restaurant holding one or more Michelin stars.
