Monroe's is one of Galway's best-known pubs with a vibrant music scene and large customer base.

The Role

Monroe's are seeking an experienced Sous Chef to join their existing team.

Responsibilities

- Assist the Head Chef in planning, preparing, and executing menus.
- Supervise and coordinate kitchen staff to ensure smooth service.
- Maintain food quality, presentation, and consistency according to standards.
- Monitor inventory, order supplies, and manage stock rotation to minimize waste.
- Ensure compliance with food safety, hygiene, and health regulations.
- Step into the Head Chef's role when required, managing all kitchen operations.
- Contribute to menu development, including seasonal and special offerings.
- To prepare food and work within the kitchen team to ensure dishes are of the highest standards.
- Ensure that the kitchen is organised and that all kitchen areas are kept clean on a daily basis.
- Ensure HACCP and Health & Safety procedures are implemented and records are up to date on a daily basis.

Requirements

- The ideal candidate will have a minimum of 2 years' experience in a similar role.
- Candidates should be able to demonstrate flair, creativity, and skill in the kitchen.
- Experience in working in a high volume busy environment.
- Must be able to work well on your own initiative and to work in a team environment.
- Excellent knowledge of HACCP.
