Lead Culinary Professional

We are seeking an exceptional Lead Culinary Professional to oversee a large banqueting operation, restaurant dining, and bar food across multiple kitchens. The successful candidate will be responsible for coordinating our kitchen teams to ensure seamless service across all areas.

About the Role

The ideal candidate will have strong leadership skills and the ability to work under pressure to maintain high standards. Key responsibilities include:

  • Menu Development: Identify and introduce new culinary techniques, assisting the kitchen team in meal preparation, creation, plating, and delivery.
  • Nutritional Awareness: Be conscious of food GP achievement and ensure all menus and portion control meet desired GP levels.
  • Labor Management: Be conscious of labor costs and costs throughout the department.
  • Inventory Control: Ensure all incoming stock is received, checked off against the invoice and rotated with existing stock as necessary.
  • Machinery Maintenance: To ensure that all machinery is operated in line with trained instructions and is maintained in a clean working condition.
