Job Title: Food Service Operations Manager

At the heart of any successful food and beverage service is a well-organized operation. As our Food Service Operations Manager, you will be responsible for ensuring that all aspects of food service are running smoothly and efficiently.

Key Responsibilities:

  • Establish and implement standards of performance within the food service areas of the hotel.
  • Train, manage and motivate team leaders and staff to ensure they are constantly developed and challenged.
  • Provide exceptional customer care in all food and beverage areas, dealing with customer complaints/comments and passing on relevant information to management.
  • Maintain accurate stock levels in each area, documenting all stock movement and recording issues/transfers of stock.
  • Ensure compliance with rules of operation for the hotel clock-in system, accurately maintaining rosters and costings and making timely amendments as necessary.
  • Work collaboratively with the management team, being aware of colleagues' needs and being flexible at all times.
  • Recruit employees who possess the right skills, placing them in the right position at the right time.
  • Develop an environment that promotes employee morale and encourages team members to take pride and commitment in their work.
  • Collaborate with the Hotel Human Resources Manager to develop an effective training plan for the department.
  • Prioritize your area of work and maintain company policies and procedures.
  • Comply with statutory and legal requirements for health & safety, fire, hygiene, licensing and employment, ensuring that team members are trained accordingly.

Specific Accountabilities:

  • Achieve agreed budget for bars, controlling costs and expenditure, and setting up purchasing specifications as required.
  • Maintain accurate stock levels in each bar area, documenting all stock movement and recording issues/transfers of stock.
  • Manage Beverage Department employees, ensuring safe working practices and procedures are adhered to at all times.
  • Responsible for cash procedures, including counting and recording floats, monitoring monies from floats, reconciling revenue, completing lodgements and investigating discrepancies.
  • Ensure adherence to hotel policy regarding credit card and cheque transactions, as well as safe usage.
  • Develop good relations with beverage companies and order stock supplies when necessary.
  • Compile a weekly roster for F&B areas, considering revenue forecasts and labour budgetary guidelines.

This role requires flexibility and adaptability, as you will be working closely with the Management Team and other departments to achieve business objectives.
