  • Financial acumen, including understanding of food gross profit, payroll and costs.

  • Ability to prepare food efficiently and maintain a high level of quality.

  • Capacity to operate a spartan and hygienic waste management program.

  • Experience in managing teams and developing staff.

  • Collaborative approach with other hotel departments and managers.
